Retreat Information and Policies

The Hummingbird Retreat offers 2 different retreat packages. We offer a three-night stay and a four-night stay. The three-night stays are either Thursday - Sunday or Sunday - Wednesday. The four-night stay is Sunday – Thursday.
  • The minimum group stay is 6 guests.
  • Double occupancy will be required in all rooms.
  • If a guest requests an individual room, and it is available, a fee of $40 per night will be added for that guest for that visit.
  • The prices are as follows:

o   3-night stay - $245 (includes hotel and sales tax)

o   4-night stay - $328 (includes hotel and sales tax)

  • The deposit is $20 per person. This is non-refundable (as we have reserved these dates for you and your friends), but it may be transferred to a new date within 12 months of the original booking.
  • The remainder of the retreat balance is due upon arrival and can be paid individually with cash, check, or credit card.
  • By reserving your retreat stay, you agree to take full responsibility for all your guests and that all guests abide by The Hummingbird Retreats policies, rules, and regulations.
  • The Hummingbird Retreat is not responsible for accidents.
  • No pets allowed.
  • No smoking except outside.
  • All rates are subject to change without notice.

The Hummingbird Retreat - Menu

 

The following is our menu with the ingredients that go into making the various dishes (REVISED 9/19/19)

Our goal is to provide this menu to the leader of each group so they can check with their attending members:

  • Food will be served as a Family Style Dining. Please understand, anyone with problems with the menu, we can make some minimum changes, but we cannot prepare separate menus as we are not set up like a restaurant and don’t have the capabilities of making a lot of changes.
  • To make sure those with food allergies are made aware of the ingredients.
  • To choose for the group what will be served at the retreat.
  • If you want to have 2 meals instead of 3 each day, we can accommodate that. If you do this, we will have a sandwich buffet and soup on your arrival night.

Let’s review the meal service provided.

  1. DAY 1 -Arrival day (This is Day 1) – Arrival time is 3 PM. Our staff cannot help to unload the vehicles till then.
    1. The food service on arrival day will consist of a sandwich buffet. Served from 5:00 to 5:30 PM.
  2. Day 2 of the retreat will consist of the items chosen by the group leader:
    1. Breakfast – SERVED AT 8:30-10:30
    2. Lunch – SERVED AT 12:00 chosen from the following menu.
    3. Dinner – SERVED AT 5:00 chosen from the following menu and (1) dessert from the following menu.
  3. Day 3 of the retreat (items chosen by group leader). Same as day 2.
  4. Day 4 of the retreat – departure time is 12 PM.
    1. Brunch – served at 8:30 AM.
 

BREAKFAST

CONTINENTAL BREAKFAST

This is a HUGE variety of breakfast yummies –This will consist of a variety of cereals, a variety of seasonal fruits, variety of yogurt, breads, and the following:

Day 2 – Everything listed above plus biscuits, sausage patties, and hard-boiled eggs.

Day 3 – Everything listed for Continental breakfast plus your choice of either scrambled eggs and bacon, shirred eggs, or deluxe scrambled eggs which is eggs with cheese, sausage, and onion

Day 4 - Everything listed for Continental breakfast plus your choice of either waffles or pancakes with sausage links, French toast, or quiche

 

LUNCH

 

STUFFED BAKED POTATO WITH BRISKET, SOUR CREAM AND CHEESE

A baked potato stuffed with delicious chopped beef brisket and you add the condiments

BARBEQUE SANDWICH (Served with chips)

STROMBOLI

A delicious Italian sandwich with various kinds of meats, cheese, and marinara sauce. Served with chips

SOUP AND SALAD

A delicious salad with soup of either Tomato bisque soup, Chicken Enchilada Soup, Potato Soup, or Vegetable Soup (no sides)

MEATBALL SUBS

Italian meatballs, with marinara sauce and mozzarella cheese in a sub bread. Served with chips.

CHEF SALAD

Salad with ham and turkey (no sides)

 

FRITO PIE

A cold-weather favorite with chili and Fritos.

CHICKEN SALAD

Chicken, grapes, apples, pecans, celery, mayo, and salt & pepper. It can be served on slider bread or bed of lettuce. (This is served with either tomato bisque soup or chips.)

TUNA SALAD SANDWICHES

Tuna salad made with pickles, onions, and mayo. Served with white and wheat bread

CLUB SANDWICH

Turkey, ham, bacon, American cheese, lettuce, tomato, and mayo or mustard. Served on toasted bread. (This is served with either tomato bisque soup or chips.)

BLT

Bacon, lettuce, tomato. Served on white bread. (This is served with either tomato bisque soup or chips.)

 

DINNER

SPAGHETTI AND MEATBALLS

Spaghetti, red sauce served with meatballs (served with salad and garlic toast)

SHRIMP CREOLE

Steamy and traditional shrimp creole with homemade creole sauce, rice, and shrimp always a crowd favorite (Served with a salad and rolls)

CHICKEN SPAGHETTI

Chicken breast, Velveeta cheese, onion, bell pepper, carrots, stewed tomatoes, cream of mushroom soup, spaghetti noodles (served with salad and garlic bread)

LASAGNA

Ground beef, noodles, cottage cheese, mozzarella cheese, red sauce, and parmesan cheese (served with salad and garlic bread)

TACO RING

Ground beef, cheese, seasonings, served in crescent rolls (served with rice, chips, and salsa)

TACO SOUP (served with tortilla chips and salsa)

Ground beef, ranch seasoning, corn, a mixture of beans. (Served with salad)

SOUTHWEST SALAD

Chicken with Santa Fe seasoning, lettuce, cherry tomatoes, corn, black beans, cheese, tortilla chips served with a southwest salad dressing

TACO SALAD

Ground beef, lettuce, tomatoes, black olives, cheese, and sour cream. (Served with queso, chips, salsa or Italian dressing, and Spanish rice)

MEXICAN CASSEROLE (CHICKEN OR BEEF)

Chicken breast or lean ground meat, onion, Rotel tomatoes, cream of mushroom soup, cream of chicken soup, enchilada sauce, corn tortillas, and cheese (Served with Spanish rice, & flour tortillas)

CREAMY CHICKEN ENCHILADAS

Chicken breast, onion, green chilies, cream cheese, butter, whipping cream, and flour tortillas (served Spanish rice, & flour tortillas)

HAMBURGERS

Hamburger meat with buns and all the trimmings (Served with French fries)

TACO BAR

Seasoned ground beef, variety of taco seasonings, taco shells and soft tortillas. Served with Spanish rice and queso and chips

CHICKEN POT PIE

A wonderful dish that consists of chicken, vegetables, and biscuits.  (Served with a salad)

PATTY MELT

Absolutely delicious! This is two large patties (ground beef) with seasonings, with cheese and sautéed onions in the middle and then topped with sautéed onions. (Served with (pick 2) mashed potatoes, roasted potatoes, baked potatoes, baked sweet potatoes, salad, green beans, corn, steamed cabbage w/ bacon, baked spinach, broccoli salad, sautéed vegetables, or carrot soufflé), and rolls

KING RANCH CHICKEN

Chicken, Rotel tomatoes, cream of chicken soup, cream of mushroom soup, chili powder with tortillas (Served with salad and rolls)

CHICKEN & DUMPLING SOUP

Chicken, dumplings, and soup create a wonderful comfort food (served with salad)

SWEET AND SAVORY CHICKEN

Chicken, apricot preserves, Catalina dressing, Lipton onion & mushroom seasoning - This is so good! (Served with (pick 2) mashed potatoes, roasted potatoes, baked potatoes, baked sweet potatoes, salad, green beans, corn, steamed cabbage w/ bacon, baked spinach, broccoli salad, sautéed vegetables, or carrot soufflé), and rolls

CHICKEN PARMESAN

Breaded chicken breast served with spaghetti, Marinara sauce, (Served with salad and garlic bread)

CHEDDAR RANCH CHICKEN

Chicken breasts with mayonnaise, cheddar cheese, and ranch seasoning. Delicious!!! (Served with (pick 2) mashed potatoes, roasted potatoes, baked potatoes, baked sweet potatoes, salad, green beans, corn, steamed cabbage w/ bacon, baked spinach, broccoli salad, sautéed vegetables, or carrot soufflé), and rolls

MEATLOAF

Lean ground meat, oatmeal, egg, onion, bell pepper, tomato sauce, tomato paste, and seasonings (Served with (pick 2) mashed potatoes, roasted potatoes, baked potatoes, baked sweet potatoes, salad, green beans, corn, steamed cabbage w/ bacon, baked spinach, broccoli salad, sautéed vegetables, or carrot soufflé), and rolls

ON THE LIGHTER SIDE OF THINGS

Ground turkey meat with cabbage, carrots, cashews, and water chestnuts, mixed with soy sauce. This is a delicious recipe for those not wanting such a heavy meal. This is served with (pick 2) fried rice, salad, green beans, steamed cabbage, sautéed vegetables, or baked spinach.

RITZY CHICKEN

Chicken breasts, with cream of chicken and cream of mushroom soup, sour cream, and Ritz crackers that will surely have your mouth watering for more. (Served with (pick 2) mashed potatoes, roasted potatoes, baked potatoes, baked sweet potatoes, salad, green beans, corn, steamed cabbage w/ bacon, baked spinach, broccoli salad, sautéed vegetables, or carrot soufflé), and rolls

PORK LOIN

Pork Loin with a raspberry glaze. (Served with (pick 2) mashed potatoes, roasted potatoes, baked potatoes, baked sweet potatoes, salad, green beans, corn, steamed cabbage w/ bacon, baked spinach, broccoli salad, sautéed vegetables, or carrot soufflé), and rolls
